Bourbon Pecan Brie Bite

INGREDIENTS

  • 1 cup brown sugar, packed
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon bourbon
  • 1/4 cup roasted chopped pecans
  • 8 ounces round of brie
  • 1.9 ounces pkg frozen mini fully baked phyllo shells 15 shells

INSTRUCTIONS

  • Preheat the oven to 350 degrees F.
  • Add all ingredients but the brie and phyllo shells to a small bowl and stir to combine.
  • Remove the rind from the brie and discard the rind. Then, cut the brie into cubes about ¼ inch squares.
  • Place a cube of brie into each phyllo shell and top with ½ teaspoon of the bourbon pecan mixture.
  • Place the full shells on a small baking sheet and bake for 10 minutes or until the brie has melted and is bubbly.
  • Remove from the oven and serve warm or at room temperature.

Emma’s Cookies

Emma was a feisty little neighbor of Gramzie and Grampzie and an amazing baker. Here’s her recipe for (what I believe are) Hungarian Walnut Roll Cookies.

Editors note: The recipe card seemed to be missing a step or two. After a Google search I found a similar recipe and did my best to fill in the blanks.

Cookie base
2 sticks butter

1 8oz cream cheese

2 cups flour

For the filling

1 cup sugar

1 1/2 cup ground walnuts

Egg whites or milk – enough to create paste like dough

Mix together cookie base and rollout into rectangles. Cut dough into @ 2 inch by 3 inch squares. Fill squares with walnut mixture and fold closed. Dust with sugar (I just made that up but it sounds like a good idea.)

Bake at 350 for 20-25 minutes on a cookie sheet.


Peanut Butter Chocolate Chip Cookies

Another sweet cookie recipe from the recipe box of Gramzie this time with peanut butter.

18 oz creamy peanut butter

2 cups margarine, softened

2 cups sugar

2 cups brown sugar

4 eggs

2 t vanilla

5 cups flour

4 T baking soda

4 cups chocolate chips

preheat oven to 350°. Cream together the peanut butter and margarine. Add sugars, eggs and vanilla. Stir flour and baking soda together in a separate bowl. Add dry ingredients to the creamed mixture and stir in chocolate chips.

Using a tablespoon or cookie scoop drop dough into greased cookie sheet for 10-12 minutes.

Cranberry Brie Filled Biscuits

This one makes a great fall, winter holiday starter

SERVES: 8

PREP TIME: 10 MINUTES

COOK TIME: 15 MINUTES

INGREDIENTS

1 can refrigerated store bought biscuit dough

½ cup cranberry sauce

8 cubes brie cheese

BUTTER MIXTURE FOR TOPPING

2 T butter

1 t fresh chopped garlic

1 T fresh chopped parsley

INSTRUCTIONS

Preheat oven to 350 degrees. Cover baking sheet with foil and spray with nonstick spray.

Open canned biscuit dough. Flatten each piece into about a 4 inch round.

Add 1 tablespoon of cranberry sauce along with a 1 inch by 1 inch piece of brie. Fold biscuit on top of itself and pinch at seam to seal.

Mix melted butter, garlic and parsley in a small dish. Brush top of each biscuit with mixture.

Bake for 15-20 minutes, or until golden brown.

Serve and enjoy- filling will be hot, be careful!
